Preferibilmente preparati per le feste, dal Natale alla Festa di mezza estate, i pīrāgi (da cui il diminutivo pīrādziņi) costituiscono anche un ottimo spuntino per ospiti inattesi e sono perfetti se accompagnati da una birra.
Proprio per la varietà di ripieno che potevano avere i  pīrāgi possono essere preparati tutto l’anno e sono opportuni per qualsiasi occasione !

Si tratta, in effetti, di una preparazione molto simile ai panzerotti italiani: la principale differenza sta nella farcia che vi si mette all’interno. Se in Italia la maggior parte dei panzerotti viene condita con gli ingredienti principali della pizza, ovvero pomodoro e mozzarella, gli speka piradzini vengono invece farciti in genere con un misto di cipolle e pancetta.

  • FARINA 500 gr
  • PATATE 100 gr
  • LIEVITO DI BIRRA 25 gr
  • LATTE INTERO 1 bicchiere
  • BURRO 75 gr
  • SALE 1 pizzico

Ingredienti per il ripieno

  • PANCETTA AFFUMICATA 250 gr
  • CIPOLLE 50 gr
  • PEPE NERO
  • 1 pizzico CUMINO
  • ½ cucchiai da tè
  • ZUCCHERO 1 pizzico
